The bistro
A small room on the quays, a short menu, a long wine list.
Twelve tables, a zinc bar and a kitchen you can see from the door. We cook what the market has that week and write it on the board each morning.
The kitchen
Slow sauces, quick service.
Braises start the day before. Fish comes in at seven, bread at eight. By noon the board is written and the kitchen cooks to order until the last table.
The room
A back room for long tables.
Up to 18 guests seated, with its own door to the street. Set menus from three courses, and wine chosen with you a week before.
