Why we pour few wines by the glass
Twelve wines by the glass would mean open bottles going flat. We pour five, change them often, and open any bottle on the list for two glasses.

A long list of wines by the glass looks generous, but it means open bottles that wait for days. We pour five, and we change them as soon as a bottle is finished.
The rule of two glasses
If two people at a table want the same wine from the list, we open the bottle and pour by the glass. What is left goes on the board at the bar that evening.
How the list is chosen
Small growers, mostly from the south-west and the Loire, and wines that go with the food on the board. We describe them by region and grape, not by names: ask us, and we will tell you more.
