How the board is written

Every morning at eleven the board is cleaned and written again: what came in, what is left and what is gone.

At seven the fish arrives, at eight the bread comes out of the oven, at nine the vegetables are counted. By eleven we know what we can cook today, and the board is cleaned and written again.

What goes on it

Eight or nine dishes at most: the ones that depend on the market that morning. The braise, the tart and the bread are there almost every day. When a dish runs out, it is crossed through, not wiped: guests like to see what they missed.

Why a board

A printed menu says what a kitchen can cook. A board says what it is cooking. It also means we buy only what we will use, and throw very little away.
